Chimichurri sauce


2 bunches of parsley 2 bunches of cilantro 2 ounces fresh basil 1 tablespoon dried oregano 1 medium red onion 1 tablespoon chpped garlic 1/2 cup lemon juice 2 tablespoons red wine vinegar 1 tablespoon kosher salt 2 teaspoons crushed red pepper 1 1/2 cup olive oil Top and coarsely chop parsley and cilatro, removing large stems. Remove stems from basil. Chop red onin. Place onion and garlic in food processor and mince with olive oil. Add herbs, salt, red pepper and process, adding olive oil until a smooth paste forms. Add lemon juice and red wine vinegar, process for 1 minute, remove and hold until ready to serve. Good with meat.
