Pitta Bread
Ingredients:
- 2 cups bread flour
- 2 tsps yeast
- 1/2 tsp sugar
- 4 tsps sea salt
- 3 tbsp oil to taste
- Mix 1 cup of warm water with yeast and sugar and let it ferment
for 10-minutes
- Put flour in a large glass bowl, add salt, olive oil, yeast water
and mix well to become a uniform
- Cover with plastic wrap and refrigerate over night
- Remove from refrigerate and allow to become room temperature. Move
the dough to a flour dusted surface and kneed gently for 10-minute.
Return to the bowl. Cover and keep in warm place for 1-hour
- punch down the dough, divide into eight round balls, place on a
flour dusted surface, cover with damp cloth and a towel and let it
rest for 10-minute
- Put a flat stone cooking surface on an outdoor grill, turn it on and
it reach the highest temperature of about 700 deg. F
- Flatten each dough ball into a 6-inch round disk, place on the hot
stone, cook for four minutes, turn it around and cook for an
additional 3-minutes. Remove from heat and let it cool down
- Place in zip-lock bags, refrigerate, and use as needed
