Chicken Mushroom Burgers
2 slices whole wheat sandwich bread,crust removed, torn in pieces
8 ounces white mushrooms, wiped clean
3 teaspoons extra virgin olive oil, divided
1 medium onion, finely sliced
2 closes garlic minced
1 pound ground chicken
1 large egg lightly beaten
3 tablespoons chopped fresh dill
1 tablespoon Worcestershire sauce
2 tablespoons lime juice
1 1/2 tablespoon coarse grained mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
6 whole wheat bus (optional)
Lettuce and tomato slices for garnish
Place bread in food processor and pulse into fine crumbs. Transfer
to a large bowl. Pulse mushrooms in th efood processor until finely
chopped.
Hear 2 teaspoons oil in a large nonstick skiller over medium high
heat. Add onion, garlic, and the mushrooms; cook, stirring
occasionally, until tender and liquid evaporated, about 10 minutes.
Add breadcrumbs and let cool completely, 15-20 minutes.
Preheat grill or skillet at medium high heat.
Combine ground chicken, eff, dill, mustard, lime juice,
worcestershire sauce salt, pepper and mix well. Make patties to the
size of your taste. Grill or saute in the skillet. Serve with buns
and garnish.
