Sour Cream Coffee Cake By Sophie Theofanous
Filling
1 c chopped nuts (walnuts or pecans)
1/2 c brown sugar
1 tsp cinnamon
Mix the above together
Batter
1 c soft butter
6 eggs
2 c sugar
1 tsp vanilla
4 c sifted flour
1 tsp baking soda
1-1/2 tsp salt
2 c sour cream
Bake: 350 in bundt pan for 1 hr. or longer as needed (stick skinny
skewer to make sure cake is done)
Cream butter, sugar, eggs and the rest of the ingredients.
My way:
I usually beat the butter in a mixer or hand mixer and then add sugar
- beat some more and I add the eggs one at a time. I sift the flour
with the baking soda and salt. I add the vanilla after the eggs and
then the flour (a cup or more at a time) followed by the sour cream.
Put 1/2 of batter in baking pan - sprinkle with 1/2 the filling - add
the rest of the batter and top with remaining filling.
