Curry Chicken by Denise Zakeri


3 Tablespoons curry 2 Cloves garlic 1 slice hot pepper 4 tbsp cooking oil 1 sprig thyme 1 chicken cut in pieces (I like to use little drumettes) 1 sprig chives 1 onion 1 tsp Angostura bitters (Product of Trinidad & Tobago. - You can find this in Publix where they have the chinese stir fry or marinating sauces.) METHOD 1. Cut chicken in small pieces, if using whole chicken. 2. Cut up or mince seasonings and add to chicken and let it marinate for at least 30 minutes. (The longer you marinate the chicken the better it tastes.) 3. Heat oil in deep pot. 4. Mix curry powder with 1/2 cup of cold water until smooth. Add to hot oil and cook 2-3 minutes. 5. Add chicken and stir to coat in curry. Allow all water to evaporate, stir well. 6. Then add hot water and allow to cook until tender. 7. Add Anngostura bitters and season to taste.
