Marinate Carrot Salad


Marinated Carrot Salad Recipe A quick and delicious side dish, this marinated carrot salad recipe takes the humble carrot and elevates it to another level. Use fresh carrots from the farmer’s market if possible. Course Salad Cuisine Mediterranean Prep Time 25 minutes Total Time 25 minutes Servings 4 person Ingredients 5 medium-size carrots about 1 pound, washed and grated* 1 Tablespoon minced capers ¼ teaspoon ground cumin 3-4 Tablespoons extra virgin olive oil 3 Tablespoons apple cider vinegar or red wine vinegar ¼-½ teaspoon salt or to taste 4-5 grinds freshly ground black pepper ¼ cup crumbled feta cheese Instructions Combine carrots, capers, cumin, in a bowl and season to taste with salt and pepper. If serving immediately, add cheese, toss and serve. This salad tastes better with time. If you have time to let it marinate, put the mixture in the refrigerator and add the cheese right before serving. Recipe Notes *One of my favorite things about having a food processor at the ready is the grating attachment. Grating the carrots in this recipe takes about 30 seconds.
