Marinated Eggplant
Ingredients:
2 medium-sized eggplant sliced lengthwise (do not remove skin)
5 Tablespoons good olive oil
1 cloves of garlic - finely chopped
5 Tablespoons red vinegar
4 Tablespoons parsley
salt + pepper to taste
Directions:
Slice eggplant, salt on both sides, let stand for fifteen minutes.
Fry eggplant slices (Make pan hot, then place eggplant, then put
oil - eggplant absorbs less oil). Put one layer of eggplant, sprinkle
with garlic, parsley, olive oil, and vinegar. Then layer again
until the eggplants are finished. Let the eggplant marinate for a few
hours before serving.
